ril. Questo libro è stato scritto da un autore non certo professionista, ma sicuramente appassionato di Croce Rossa. Il soggetto ispiratore è Paolo Postempsky eccellente medico chirurgo, uomo eclettico e grande organizzatore. Vissuto tra il 1800 e 1900, nato a Roma ma da padre polacco e madre italiana. Laureatosi in medicina ha esercitato la professione presso l'ospedale San Giacomo di Roma. Arruolatosi in Croce Rossa ha rivestito molteplici e diversificati ruoli. È stato inviato nella guerra d'Africa per organizzare il servizio sanitario, è stato inviato nell'agro pontino nel suo ruolo di medico durante la bonifica. Il Postempsky si è distinto in tutti gli impieghi in cui è stato investito per l'efficienza che è riuscito a portare. Senza dimenticare le sue pubblicazioni mediche, che sono divenute manuali per i medici successivi. Tutto il suo operato è stato svolto con semplicità, senza enfasi e senza la ricerca dell'apparire. Nonostante tutto questo risulta un personaggio dimenticato dalla storia, ecco uno dei motivi che hanno ispirato a scrivere su di lui. La pandemia che ci ha tanto limitato nelle nostre libertà, ha provocato dei limiti nella ricerca di ulteriori notizie.

Per rispettare queste specificità ed evitare grossolani errori, non è possibile trasferire tout court soluzioni e pratiche manageriali sperimentate in altri ambiti, ma occorre prestare attenzione a contestualizzarle da un punto di vista culturale e sociale.

In-8 p. (mm. 233x158), tela rossa editoriale, pp. XL,445, con 208 figure xilografate nel t. e 1 tav. f.t. all’antip. con un “sujet d’ornement”. Nel volume sono trattati : “Grands et petits gateaux, sujets d’’ornement, entremets chauds et froids, galces au complet, conserves de fruits et de légumes. "Seconda edizione" (la prima è del 1894) di questo classico libro di pasticceria, appartenente alla serie di celebri opere culinarie del francese Dubois (1818-1901), allievo di Louis Haas della casa Rothschild, cuoco del conte Uruski, capo delle cucine del Kaiser Guglielmo I. Manca al Vicaire e al Bitting che citano svariate altre opere del Dubois. Pagine lievemente ingiallite per la qualità della carta, altrimenti ben conservato.
