L'ultima parte del volume è dedicata alla scheda tecnologica, importante strumento atto a migliorare la tecnica di produzione del formaggio: per avviare il casaro al lavoro di caseificazione, sono predisposte 25 schede di trasformazione che riguardano i formaggi a pasta molle, semidura e dura, erborinati e a pasta filata. Il manuale è completato da tabelle, schemi e disegni utili al casaro per intuire con immediatezza ogni problematica che si può presentare durante le diverse lavorazioni.
