I buoi aggiogati hanno caratterizzato per secoli l'attività agricola e con essa l'insieme della realtà rurale, dividendo l'esistenza quotidiana con i contadini che li "governavano", li chiamavano con un nome proprio e li reputavano risorsa di grande valore. Buoi da lavoro e carri agricoli sono ormai scomparsi e oggi è quasi impossibile vedere arare una pariglia aggiogata. E tuttavia questi animali sono ancora presenti nella nostra quotidianità; basti considerare le numerose espressioni linguistiche cui hanno dato origine. Il libro si compone di due parti: nella prima si rintracciano gli aspetti caratterizzanti e identificativi della presenza dei bovini nelle civiltà del Mediterraneo e dei buoi nel mondo contadino; nella seconda si ricostruisce l'evoluzione della trazione animale dalla preistoria al carro agricolo, che viene quindi descritto nei dettagli costruttivi. Di particolare interesse è la permanenza di conoscenze e pratiche relative al lavoro e al rapporto con i buoi, una cultura materiale che i contadini hanno tramandato per millenni pressoché intatta e che fino a circa cinquant'anni fa era ancora ben presente nel vissuto quotidiano.
