This is an alphabetical register of guests showing the room number date of arrival the guest names home city number of persons in the party usually 1 or 2. Written in a clerk’s hand. Masson†“Beauregard†wine “Eaux de Montreux†“Blanchot†white wine “Gallo†accounting/tax/ new constructions/ lighting eclairage heating chauffage building maintenance entretien immeubles New York Herald reclamer laundry room buanderie etc. / General Notes Regarding the History of this Hotel: The Hotel des Alpes-Grand Hotel or Residence des Alpes is an assemblage of buildings which formed a former palace in the town of Territet in the Montreux municipality of Switzerland. In 1840 the town bought a parcel of land on which to build a hostel entitled ‘Chasseur des Alpes’. Over the following years this hostel was enlarged three times to become - in 1855 - the Hotel des Alpes. The main building was designed by Henri Chessex son of the owner and brother of Ami Chessex. The opening of the Hotel led to a tourist boom and in 1861 a railway line was opened between Montreux and Villeneuve calling at Territet. In 1875 a dining hall was added to the building and two years later Ami Chessex chose the architect Louis Maillard later joined by Eugene Jost to build the Grand Hotel beside the Hotel des Alpes. The decor was by Marcel de Chollet. The two buildings were linked by a corridor and soon formed a single structure. / Among the Hotel’s many notable guests were Elisabeth of Bavaria who visited four times and Francis Joseph I of Austria in 1893. The Hotel built on this success housing the first telephone in Switzerland. In 1975 it closed and its main hall and dining hall were turned into a theatre whilst the Grand Hotel’s bedrooms became the National Swiss Audiovisual Museum though this closed in 2008 and left the premises in 2012 to allow for their renovation. The two buildings are classed as cultural monuments. It suffered fires on 29 January 1984 and 28 September 2012. / This property is part of the ensemble Hetel des Alpes-Grand Hotel a monument of national importance. It belongs to Andre Regne better known under the pseudonym of "Dad" who was a key figure in the Montreux nightlife. The Alcazar a true Belle-Epoque jewel was built by the architect Eugene Jost at the end of the 19th century. Added pictures on request. Hotel St. Francis San Francisco Calif.. Victor Hirtzler
The Hotel St. Francis Cook Book. By Victor Hirtzler
Chicago: Published by The Hotel Monthly Press John Willy Inc 1919. Large octavo 26 x 17.5 cm. iv 430 iv pages. Photographic portrait of the author in chef's whites and smoking cap frontispiece. Publisher's advertisements. Indexes. ~ Evident FIRST EDITION. A handsome reminting of selected material originally presented in the author's Hotel St. Francis Book of Recipes and Model Menus: L'Art culinaire of 1910 an important and influential professional cookbook that marked San Francisco's emergence as a world culinary center; includes too a sampling of menu files for corporate banquets and luncheons catered by the kitchen staff of St. Francis between 1915 and 1919 that is after the publication of L'Art culinaire. Composed as a series of menus ordered according to the calendar year at the head of each page followed beneath by recipes - some detailed some perfunctory - for selected items from the menus. The scope may be reasonably described as considerable. That the general index lists two hundred named recipes alone for preparing eggs conveys some idea of Hirtzler's manifestly irrepressible capacity for invention. ~ It is useful to remember that a century and more ago many of the compilers of local cookery books could claim intellectual ownership of what they published only by stretching the notion of authorship beyond all recognition. Maids and cooks were the relevant repositories of knowledge and disseminators of practice. And when the privileged class traveled - sometimes staying in one place for weeks months or seasons - hospitality service was for all intents and purposes an elaboration of home. Staff including those supervising the great hotel and resort dining rooms of the age were servants. Chefs may have been well regarded even fêted but today it is easy to forget that in yesterday's world the road to celebrity was paved by servitude. ~ But their cookbooks were the expression of their own authorial voices. In this they must be counted as unrepresentative of early cookbook publishing broadly however much their intricate arrangements garner attention. They may nonetheless be representative of place revelatory of both the preferences of a community and of the extensive apparatus built to satisfy it. ~ The bibliographer Dan Strehl identified the Alsatian Victor Hirtzler 1874-1931 some time ago in One Hundred Books on California Food & Wine Los Angeles: The Book Collectors 1990 page 21. as "one of the earliest celebrity chefs." Among other means of attracting restaurant clientele "Hirtzler presented seasonal menus demonstrating the highly sophisticated hotel dining of the time" with menus heavily influenced by the haute cuisine of European royal courts. After a sidereal career that included posts at the Winter Palace in St. Petersburg and the royal Belém Palace in Lisbon he had arrived at the St. Francis on Union Square in 1904 endured the catastrophes of 1906 and remained after the city's rebuilding until 1925 when he retired to Strasbourg. A fuller account is available in David Shields's The Culinarians Chicago: University of Chicago Press 2017 pages 526-529. Thus it would not be far off the mark to describe the Hotel Monthly Press edition published in Chicago as a sort of monument or Gesamtausgabe honoring the career and achievement of an admired artist. ~ Near fine in publisher's green boards lettered and bordered in gilt. OCLC locates ninety copies; Bitting page 231; Brown 843; Cagle 363; not in Stoner. Published by The Hotel Monthly Press, John Willy, Inc hardcover books

Bill of Fare Norristown Hotel Montgomery County Pa.; Morris Jones
Norristown Hotel Kept by Morris Jones. Travellers may expect good accommodations and every exertion made to give satisfaction
Norristown Penn. 1814. Single sheet 20.75 x 11.5 cm. but irregular printed recto only; typographical border. Manuscript annotations. ~ A very early Pennsylvania bill of fare for the Norristown Hotel with a list of items on offer including Breakfast Dinner Supper Lodging Wine Brandy Gin Spirits Punch Porter Beer Cider Segars Hay and Oats. Manuscript annotations indicate "Gentleman's Bill May 16th 1814" with handwritten prices added for dinner brandy porter hay and oats a man on the move!. The final lines indicate payment of $4.25 and the elaborate signature of hotel owner Morris Jones. "Morris Jones gives notice in July 1813 that he kept the "Norristown Hotel corner of Egypt or Main and De Kalb Streets" and that "a constant supply of newspapers will be kept for the use of the house." This is interesting for giving an early mention of "hotel" which it would appear was now about being introduced as more pretentious than inn or tavern. It was a two-story stone house forty by thirty-seven feet with an adjoining kitchen. The stable was also of stone fifty by twenty-seven feet with sheds and outbuildings. This property was built by General Isaiah Wells about 1800 and kept by him until his election as sheriff when he moved to the jail. It was long known as the most noted stage-house in Norristown. In 1834 the Norristown Hotel was then kept by Levi Roberts and was offered at public sale by the assignees of Isaiah Wells." Bean's 1884 History of Montgomery Co PA; http://www.usgwarchives.net/pa/montgomery/beantoc.htm. A single horizontal crease from a fold; small pinhole between first two lines of text. Otherwise fine. Unrecorded. OCLC locates now copies not in AAS or Library Company of Philadelphia. unknown books

Hotel St. Francis: Book of Recipes and Model Menus: L'Art Culinaire. By Chef Victor Hirtzler
San Francisco: Putney Haight Telegraph Press; Printed and Bound by the Hicks-Judd Company 1910. Octavo 24 x 16 cm. 31 67-307 pages. Advertisements. Illustration of the Hotel on page 3. Portrait of the author in chef's whites and smoking cap on page 6. ~ FIRST EDITION stated subscription issue. One of the more important and influential early California professional cookbooks marking San Francisco's emergence as a world culinary center. Divided between a menu section Part 1 with two hundred menus and "Extraordinary and Secret Compositions in Culinary Art" Part 2 with more than two thousand recipes. A dose of hyperbole can be assumed regarding the claim to secrecy as at least some of the recipes had appeared in the author's column in The Evening Post whose collaboration is acknowledged on page 18. A sampling: Austrian Soup Bread Berliner Pfannkuchen English Crumpets Velvet Soup Cream of Chicory Soup Green Walnut Confit Bar le Duc Crème au Kirsch Coup St. Jacques Chiffonade Salad Salad Eugenie Okra and Sweet Peppers mistakenly printed twice Tripe à la mode Caen Baron of Lamb Squab Michels Quail Forestiere Fondue Savarin Pineapple Omelette Bohemian Eggs String Beans with Raisins Viennese Carrots Raspberry Souffle Cream Puffs St. Francis. ~ The bibliographer Dan Strehl identified the Alsatian Victor Hirtzler 1874-1931 some time ago in One Hundred Books on California Food and Wine Los Angeles: The Book Collectors 1990 page 21. as "one of the earliest celebrity chefs." Among other means of attracting restaurant clientele "Hirtzler presented seasonal menus demonstrating the highly sophisticated hotel dining of the time" with menus heavily influenced by the haute cuisine of European royal courts. A fuller account is available in David Shields's The Culinarians Chicago: University of Chicago Press 2017 pages 526-529. ~ The didactic "models" presentation of L'Art culinaire is likely intended as a counter to Escoffier's Le guide culinaire a reference text that had recently appeared in an abridged English translation in 1907. Hirtzler's subscription edition of 1910 which includes a list of the patrons who underwrote its publication has become quite scarce. Stamped "Subscription Edition" on the front cover; includes the list of patrons that according to the edition note on page 9 was reserved for subscribers; all of these copies are missing two signatures which accounts for the pagination gap. ~ In publisher's tan cloth with black lettering. Light rubbing and extremity wear to covers. The front paste-down bears an ownership inscription in red pencil "Property of Marge deYoung Portland Ore." and the free front endpaper a rubber-stamped name and address of an Oregon paperback exchange.
