Il est le père du vicomte Jean-Baptiste Marie Chaptal de Chanteloup. - Un prêtre de Mende est son premier éducateur, il entre ensuite pour cinq années au collège de Mende suivies d' une année de philosophie à Rodez. Chaptal commence des études de médecine à Montpellier de 1774 à 1777. « Après lautopsie dun adolescent qui se réveille au cours de lopération », il s'éloigne de la médecine et se rend à Paris pour étudier la chimie. Sa renommée est surtout due aux applications quil fit de la chimie dans lindustrie, notamment avec lamélioration de la production de lacide chlorhydrique. Il donne son nom à la chaptalisation, procédé permettant daugmenter par sucrage la teneur en alcool des vins. - Une très grande importance doit être attribuée à son application de la formule de Lavoisier sur la transformation du sucre en alcool : on peut considérer que cette application de la formule capitale de lnologie constitue lacte de naissance de la chimie moderne du vin3. Chaptal avait développé sa doctrine sur la vinification dès 1799 lors de la rédaction de larticle « vin » du Dictionnaire dagriculture de François Rozier. Immédiatement, les propriétaires de vignobles semparent de son travail et des savants tels quAntoine-Alexis Cadet-de-Vaux et Jean-Louis Roard publient cette nouvelle doctrine avec leurs propres observations. Fort de tous les renseignements que lui fournissent ceux qui ont adopté ses principes, Chaptal développe son sujet dans son traité de 1807, qui a révolutionné lart de la vinification. La ""Chimie appliquée à l'agriculture"" est le dernier ouvrage publié par ce grand chimiste. Dans ce traité qui sera réimprimé et deviendra un des classiques de lagronomie, il applique pour la première fois les nombreuses découvertes chimiques à lagriculture scientifique et technique, mais aussi pratique : importantes considérations sur la composition des sols, de lair, de la chaleur, sur le rôle de leau, linfluence de lélectricité sur la végétation, le rôle de la lumière et de la température (source : Wikipedia)" "Rare exemplaire en 2 tomes complets et homogènes de l'édition originale de la Chimie appliquée à l'agriculture de Jean-Antoine Chaptal, sous couverture d'attente muettes hormis une pièce de titres au dos, partiellement absente du tome 1. Couvertures propres, pliures aux coins des plats, quelques rousseurs, légère tache sur le bord gauche du tome 2, intérieur frais et propre, papier de qualité, légères auréoles sur quelques pages (mouillures claires et un peu sombres sur quelques pages), notamment au début du tome 2, signature ancienne de l'ancien propriétaire au début des deux tomes avec la date de 1829, cela reste un bon ensemble ""dans son jus"" d'un des grands textes de la chimie agricole, avec des informations générales sur la végétation des plantes et l'agriculture mais aussi des applications pratiques sur la fermentation, la distillation, le lait jusqu'à l'habitat rural et son hygiène. Un long chapitre est consacré au sucre de betteraves, Chaptal a d'ailleurs publié un mémoire important sur le sujet dans l'Académie Royale des Sciences en 1818. A noter un article intéressant sur l'extraction de l'indigo pour les pastels."‎
