Ciò che costituisce il processo non è lo spirito, ma la vita ciecamente irrompente, di cui lo spirito, come la materia, non è che una formazione secondaria. Tale corso vitale distrugge tutte le sue costruzioni, contraddice e nega ogni suo stadio raggiunto, non lascia che alcuna sua formazione conservi quella permanenza e stabilità a cui essa al momento del suo sorgere pretende e che crede di possedere, e così le relativizza, le 'scetticizza' tutte. Il corso vitale, si avvolge nella contraddizione originaria e fondamentale che, mentre non può vivere se non entro forme, non vuole e non può nemmeno vivere in esse ed ha bisogno di distruggerle successivamente tutte per continuare la sua vita." br. Oggetto della storia nel suo significato più alto appare essere il mutamento delle forme della civiltà. Questa è la manifestazione esterna, di cui la storia, come scienza empirica, s'accontenta, in quanto essa pone in luce in ogni singolo caso i concreti esecutori e le cause di quel mutamento. Ma il lato profondo della cosa sta in ciò, che la vita, in forza della sua essenza, che è il moto, lo sviluppo, lo scorrere oltre, lotta di continuo contro i suoi propri prodotti diventati rigidi e non moventisi insieme con essa. Poiché però essa non può possedere la sua stessa esistenza esterna tranne che appunto in qualche forma, così questo processo si rivela in modo visibile e determinabile quale sostituzione della vecchia forma mediante una nuova. Il mutamento continuo dei contenuti della civiltà e da ultimo dell'intero stile di questa, è l'indice o piuttosto la conseguenza della infinita fecondità della vita, ma anche della profonda contraddizione in cui sta il suo eterno divenire e mutarsi con l'obbiettiva validità e l'affermazione delle sue manifestazioni e forme, con le quali o nelle quali essa vive. Essa si muove tra morire e divenire, divenire e morire.

Un tempo la fame guidava gli uomini alla ricerca di se stessi, poi venne l'apparente abbondanza mercantile e gli atti alimentari sono degenerati in rappresentazioni che la modernità ha risolto in un puro desiderio senza oggetto. Dai buoi delle pitture rupestri di Lascaux ai macinati di c.a.n.i. (composti alimentari non identificabili), con i quali nell'indifferenza generale si confeziona la stragrande quantità di alimenti del XXI secolo, non sono passati che un pugno di secoli. Eppure, mai come oggi il cibo è pura forma, non più soddisfazione di un bisogno e neppure appagamento di un desiderio. Una forma che ha perduto ogni legame con quella rete di significati sovrapposti al cibo che ha fatto la storia della nostra "cultura alimentare". "Se da una parte c'è la grande massa dei consumatori di c.a.n.i., dall'altra c'è un'élite di gourmet - intesa proprio nei termini con la quale la descrive José Ortega y Gasset - per la quale il valore di un alimento non è riconosciuto, se non quando questo è perduto e seppellito dentro un coacervo d'informazioni catastrofiche. A questo punto la sua protezione segue le modalità ottocentesche della conservazione e della restaurazione museale delle opere d'arte".
