MM. l'Empereur Alexandre III dans le voyage à travers les Russies en 1888".Le cuisinier valaisan Joseph Fabvre (1844-1903), très originale figure aux opinions libertaires, ami de Gustave Courbet, Élisée Reclus, Bakounine, etc., fut l'un des premiers journalistes gastronomiques, lançant en 1877 le premier journal culinaire écrit par un cuisinier. Il a pour titre La Science culinaire, et fut publié pendant 7 ans à l'adresse de Genève. C'était aussi un progressiste attaché, dans son métier même, à développer la santé de l’enfant et de la famille. Aussi, dans ce gigantesque répertoire, n'oublie t-il pas les régimes, le végétarianisme, les propriétés curatives des plantes et demeure t-il persuadé qu’une nourriture saine est meilleure qu’une ordonnance médicale.
