I primi edifici risalgono alla fine dell'Ottocento e si devono ai coloni inglesi delle pianure del Nebraska, i quali in mancanza di pietre e di legname utilizzarono con successo balle di paglia per costruire le loro case. Tale tecnica prosperò fino agli anni quaranta quando la diffusione del cemento ne causò il graduale declino. Attualmente, in tutto il mondo, vengono costruiti circa 1000 nuovi edifici in paglia all'anno. In Italia, uno dei primi fabbricati in balle di paglia è stato realizzato nel comune di Pramaggiore (Ve): si tratta di un'abitazione su due piani, ognuno dei quali ha un'estensione di circa 140 metri quadri. L'edificio, munito di regolare permesso a costruire, è stato realizzato da Stefano Soldati, allievo di Barbara Jones. Egli stesso ha partecipato alla costruzione di una decina di edifici in balle di paglia in diversi paesi europei.‎

Eppure ci arrendiamo più spesso di quanto vorremmo alla comodità dei dolci già pronti, perché sotto sotto pensiamo che la pasticceria sia l'antitesi di quella pausa di golosità e conforto che cerchiamo quando siamo un po' giù o quando vorremmo concludere una cena con un dessert strepitoso. Tempi lunghi, passaggi infiniti, attenzione maniacale alle dosi... Una fatica enorme. Per convincerci a mettere mano alla preparazione di una torta bisognerebbe semplificare ogni processo ed eliminare quel gergo tecnico da adepti. Le ricette dovrebbero essere facili da seguire e di sicura riuscita, senza dover ricorrere a una costosa attrezzatura professionale o a una laurea in pasticceria... Sembra un elenco di desideri irrealizzabili e probabilmente era così... prima di questo libro! Provate a sfogliarlo. È su misura per voi, lo ha scritto una persona che non ha frequentato una scuola professionale. L'unico ingrediente difficile che dovete trovare, il più importante, è la pazienza. Per il resto, affidatevi alle sue pagine. "Ho sperimentato e visto gli effetti calmanti e terapeutici della pasticceria, e consiglio di fare una torta a chiunque voglia solo dimenticare il mondo, almeno per un po'".‎
