1983 — 96 pages including index and bibliography. "Written for both country- and town-dwellers. After giving detailed information on the selection and keeping of house cows, goats and dairy ewes, the author describes the conditions necessary for producing your own cream, butter, yoghurt and cheese, whether you have a small home dairy or only a kitchen at your disposal. The approach is highly practical with step-by-step instructions and illustrations showing how to make your own cream, ice cream, butter, yoghurt, flavoured drinks, cheesecakes and hard and soft cheeses. The 50 cheese recipes probably represent the most comprehensive collection available anywhere for the home cheesemaker. Lists suppliers of dairy equipment and supplies worldwide... Invaluable for the smallholder as well as for town-dwellers interested in making their own dairy products." - from dust jacket. 50 line drawings. Usual library markings. Average wear. Binding intact.
