Der Name sollte Programm sein: Ab dem 1. Mai 1971 wurde eine typisch eidgenössische Küche geboten. - DIETER MÜLLER, 1948 in Auggen, einem kleinen Weinort in Baden, geboren, wächst - als zweitältestes von sieben Kindern - sozusagen mit Topf und Herd auf. Seine Eltern bewirtschaften den Gasthof "Lug ins Land". Seine Kochausbildung schließt er 1971 als bester von 200 Prüflingen ab und während der anschließenden Wanderjahre lernt er unter Altmeister Ernesto Schlegel in Bern die klassische französische Küche kennen. Ab 1973 kocht er zusammen mit seinem Bruder Jörg in den Schweizer Stuben in Wertheim - bereits ein Jahr später wird ihre Arbeit mit dem ersten Stern im Guide Michelin ausgezeichnet. 1977 folgt Stern Nummer zwei. Von 1981 bis 1990 ist Dieter Müller alleiniger Küchenchef und wird zweimal Koch des Jahres. Der Gault Millau zählt ihn zu den 16 besten Köchen der Welt und zeichnet ihn als ersten Deutschen mit 19,5 Punkten aus. Nach einer erneuten Wanderschaft beginnt Dieter Müller 1992 als Patron des Restaurants im Schlosshotel Lerbach - die Fortführung einer einzigartigen Erfolgsgeschichte: 1993 der erste Stern des Guide Michelin, 1994 der zweite Stern, 1997 - zusammen mit weltweit 32 weiteren Köchen - der dritte Stern, der Gipfel der Kochkunst. 1998 wird Dieter Müller von"Der Feinschmecker"als Koch des Jahres ausgezeichnet, 2002 erhält er erstmals in allen Gastroführern die Höchstnote. 2005 wird sein Restaurant vom englischen Magazin"restaurant"als bestes Restaurant Deutschlands unter den Top-50-Restaurants der Welt ausgezeichnet - keine anderes deutsches Restaurant schaffte es bisher in die Top 50. Der Gault Millau 2006 verleiht Dieter Müller die Höchstnote von 19,5 Punkten. Schmitt engagierte 1972 den in St. Moritz tätigen Badener Jörg Müller als Chef des neuen Küchenstils, die moderne französische Grande Cuisine. Ein Jahr später holte dieser seinen jüngeren Bruder Dieter Müller aus Bern an seine Seite. 1974 erhielten die Schweizer Stuben im Guide Michelin erstmals einen Stern, 1977 den zweiten. Gault-Millau und Feinschmecker verliehen dem Restaurant ebenfalls Höchstnoten.
