‎Edition originale rare et recherchée du plus important ouvrage de Parmentier sur la pomme de terre. Ayant étudié la pharmacie, Parmentier compléta ses études par une formation de botaniste, de chimiste et de physicien. En 1771, il remporta le concours de l'Académie de Besançon en proposant l'utilisation de l'amidon tiré notamment de la pomme de terre pour l'alimentation en cas de disette. L'ouvrage résume toutes les données que Parmentier avait mis en évidence tant sur le plan chimique que sur le plan de l'alimentation humaine, ainsi que les differentes facons de cultiver la pomme de terre et de l'utiliser dans l'alimentation.‎

La famille des Ébénacées est une famille de plantes dicotylédones qui comprend 500 espèces réparties en deux à six genres. Ce sont des arbres ou des arbustes principalement des régions tropicales mais qui comptent quelques espèces dans les zones tempérées. Ils constituent une importante source de bois : le bois d'ébène et de fruits. Le plaqueminier du Japon est cultivé sous les climats tempérés pour ses fruits (kakis). Une autre espèce produisant des fruits comestibles est le plaqueminier de Virginie alors que les fruits du plaqueminier d'Europe sont uniquement ornementaux. La classification phylogénétique place cette famille dans l'ordre des Ericales et y incorpore les Lissocarpaceae.‎

‎Seltene Monografie über die Kartoffeln, publiziert vom französischen Botaniker Antoine Augustin Parmentier (1737?1813). Er studierte Pharmazie in Paris und war danach für die Armee in ganz Europa tätig, wo er sich vor allem mit dem landwirtschaftlichen Anbau von Lebensmittel beschäftigte. Aufgrund seiner Verdienste um den Kartoffelanbau wird eine populäre französische Variante eines Kartoffelpüreeauflaufs «Hachis Parmentier» genannt (vgl. Wikipedia). ?
