Il fatto appare ancor più singolare giacché tale decremento si è prodotto in assenza di politiche di prevenzione o di consumo consapevole, e senza restringimenti significativi dell'offerta. Cosa è accaduto? Quali fattori sono intervenuti? E quali hanno contribuito a ridurre così drasticamente il consumo di vino? Il volume prende le mosse da tali interrogativi e, nel tentativo di rispondere, esplora dimensioni economiche, alimentari, demografiche, sociali e di costume. Dall'analisi emerge un affresco articolato, complesso, sfaccettato, legato al fatto che gli anni in cui la curva del consumo comincia a flettere (per non più riprendersi) rappresentano un periodo estremamente ricco di eventi sociali, economici, culturali, politici che hanno inesorabilmente mutato la fisionomia del nostro paese, investendo anche le modalità di consumo del vino.

This book first appeared in 1922; this is the revised edition of 1935. This is really an excellent reference on the history cultivation etymology chemistry commercial merchandising of coffee. There are fascinating chapters on the coffee trade coffee in literature and Fine art coffee drinking in Paris coffee apparatus coffee customs and manners.
