L'avant-propos nous explique la nature de ce traité « d’office » ainsi que sur les prérogatives de l'officier dans l'ancienne grande cuisine, l'importance du savoir-faire pour le décor et le sablage, la mise en place des tables, des fleurs. Il y évoque les soupers de la princesse Bagration chez qui fréquentaient l'empereur Alexandre, lord Castlecreagh, l'empereur d'Autriche, Metternich et Talleyrand. Ce traité fut publié en 1845 et 1846 sous forme de "fascicules". Notre exemplaire serait une troisième édition après l'originale de 1845 et avant celle de 1854. Gérard Oberlé dit avoir vu une édition de 1851 ! d'où mon hésitation ! Très belle présentation dans une très belle reliure de cet ouvrage RARE et Recherché. Très bon état des reliures et du papier malgré les rousseurs.

In the preface to the second edition Harry Worchester Smith gives a capsule bibography of Eustus who presided for many years in the house of W.W. Corcoran in Washington as hostess. In later life in 1904she published COOKING IN OLD CREOLE DAYS so that the old Creole recipes would not be lost. This edition here offered was published only in a limited edition of 500 copies and reproduces the original illus. and presents the text in English and in French. The recipes are in the old style without the ingredients set forward at the head of each recipe. The recipes are authentic but do require extra homework. For example the first recipe is for GUMBO FILE where one is cautioned not to put in too much of the filet--but one has to dig out on page 78-9 that filet is a powder "prepared by the Indians from the leaves of the sassafras trees". The author suggests that this powder may be found at Solari's Grocery Store Chartres St. New Orleans but one wonders if this is still true. Other recipes include Calf's Head Soup Terrapin Stew Devilled Crabs New Orleans Style Ginger cake. Solid copy with corner tips rubbed and chipped bottom front edge a spot of discoloration to the lower spine no markings the contents page and the illustrations pages roughly cut open so that the fore-edge margin is torn some other pages still unopened faint small stain to back cover Good - ; no Dj.
