A parte qualche spolverata di formaggio, che si può usare a discrezione, le ricette di questo libro impiegano esclusivamente ingredienti di provenienza vegetale.

Vince premi, apre locali e soprattutto conquista sempre più palati in Italia e nel mondo. In questo libro più di 100 ricette con gradi diversi di difficoltà e per tutte le tasche, realizzate con prodotti genuini, di stagione e di provenienza italiana (inoltre una speciale sezione finale è dedicata ai celiaci). Sono tutte ricette tradizionali, spesso "rinnovate" per dar loro un tocco di sapore nuovo e sorprendente in più.
