Paperback, 128pp. In Koken met granen maakt u kennis met verschillende graansoorten zoals amaranth, mais, tarwe, gierst, bulghur, gerst, gort, rogge, haver, spelt, rijst, quinua, boekweit en couscous. Gierst was waarschijnlijk de eerste graansoort die echt werd verbouwd. Het was al 12.000 jaar hoofdvoedsel voordat de rijst werd geintroduceerd. Vroeger werd het in een groot deel van zuid-Europa geteeld. Maar gierst werd teruggedrongen door mais, dat een grotere opbrengst per hectare heeft. Naast de overheerlijke bereidingen heeft gierst ook de prettige eigenschap vlug gaar te zijn. Kasha zijn geroosterde boekweitkorrels. Het eetbare zaad heeft een meel- en eiwitrijke inhoud. De vorm van het boekweitzaad komt sterk overeen met die van beukennootjes, al zijn ze beduidend kleiner, ongeveer 6 mm lang. De korrels zijn, indien geroosterd, donkerbruin van kleur. Indien alleen gedroogd zijn ze lichtgekleurd. Boekweitzaad heeft een enigszins nootachtige smaak, die door roosteren versterkt wordt. Veel graansoorten zijn onbekend en daarom onbemind. Dit boek geeft uitleg over de soorten granen en, wat belangrijker is, het laat zien hoe u granen tot verrassende en vooral lekkere gerechten kunt omtoveren. Granen zijn niet flauw of melig; ze zijn juist zeer smaakvol! Het bereiden van granen kost geen extra moeite; je hoeft ze niet altijd een nachtlang te weken en de meeste recepten zijn heel gemakkelijk te maken. Nieuw.
